As Deniese has said, "Home is where your heart is." Habitat understands that, for many families, the heart of the home is in the kitchen.


Habitat for Humanity has collected hundreds of recipes from Habitat affiliates all over the world, available in three great cookbooks. We thought we'd share a delicious recipe from these cookbooks each week. Try them out and let us know what you think! Broccoli, Tomato and Basil Frittata


Yield: 3 servings

Ingredients:8 ounces egg substitute
3 tablespoons milk
3 tablespoons grated Parmesan cheese
Pepper to taste
1 onion, chopped
3 tablespoons olive oil
3 tomatoes, chopped1 tablespoon fresh chopped basil
1/2 cup chopped broccoli
1/2 cup sliced mushrooms

  • Beat egg substitute, milk, Parmesan cheese and pepper in large bowl. Saute onion in olive oil in skillet until tender. Add tomatoes and basil. Saute for 10 minutes, stirring frequently. Add broccoli and mushrooms. cook for 5 minutes longer. Stir vegetables into egg mixture. Pour into greased 8x8-inch baking dish. Bake at 325 degrees for 15 to 17 minutes or just until set. Do not overbake; serve immediately.
