As Deniese has said, "Home is where your heart is." Habitat understands that, for many families, the heart of the home is in the kitchen.


Habitat for Humanity has collected hundreds of recipes from Habitat affiliates all over the world, available in three great cookbooks. We thought we'd share a delicious recipe from these cookbooks each week. Try them out and let us know what you think! Spinach Manicotti

Yield: 6 servings

6 tablespoons margarine
1/4 cup flour
2 cups half and half
1 14-ounce can chicken bouillon
1/4 teaspoon basil
1/4 teaspoon mace
1 10-ounce package frozen chopped spinach, thawed, drained
2 cups cottage cheese
1 4-ounce can slices mushrooms, drained
1/4 cup chopped green onions
12 uncooked manicotti noodles
8 ounces sharp cheddar cheese, shredded
1/2 to 3/4 cup grated Parmesan cheese

  • Melt margarine in large saucepan over medium heat. Add flour, stirring to form paste. Add half and half slowly. Cook until thickened, stirring frequently; set aside. Combine spinach, cottage cheese, mushrooms and green onions in bowl; mix well. Fill manicotti shells with mixture. Spoon half the sauce into 9x13-inch baking dish. Place shells in sauce. Cover with remaining sauce; top with Cheddar and Parmesan cheeses. Bake, covered, at 325 degrees for 1 hour.
