As Deniese has said, "Home is where your heart is." Habitat understands that, for many families, the heart of the home is in the kitchen.

Habitat for Humanity has collected hundreds of recipes from Habitat affiliates all over the world, available in three great cookbooks. We thought we'd share a delicious recipe from these cookbooks each week. Try them out and let us know what you think! Arkansas Aloha Chicken Salad

1 20-ounce can crushed pinapple
4 medium chicken breasts, skinned
1 cup chopped pencans
1 medium sweet red or Vidalia onion, chopped
1 cup light mayonnaise


  • Drain pinapple, reserving juice. Rinse chicken and pat dry. Cook chicken in reserved juice in large covered skillet for 30 minutes or until cooked through. Cool and chop chicken, discarding skin and bones. Combine chicken with pineapple, pecans, onion and mayonnaise in large bowl; mix well. Chill, covered, until serving time. Serve on spinach-lined serving plates or on toasted rolls with hot soup.
