As Deniese has said, "Home is where your heart is." Habitat understands that, for many families, the heart of the home is in the kitchen.
Habitat for Humanity has collected hundreds of recipes from Habitat affiliates all over the world, available in three great cookbooks. We thought we'd share a delicious recipe from these cookbooks each week. Try them out and let us know what you think! Golden Potato Soup
Yield: 4 servings
6 cups cubed red potatoes
2 cups water
1 cup sliced celery
1 cup thinly sliced carrots
1/2 cup finely chopped onion
2 chicken bouillon cubes
2 teaspoons dried parsley flakes
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup flour
3 cups mlik
12 ounces processed American cheese, cubed
- Combine potatoes, water, celery, carrots, onion, bouillon cubes, parsley flakes, salt and pepper in 4-quart saucepan. Bringto a boil; reduce heat to low. Simmer, covered, for 8 to 10 minutes or until potatoes are tender. Blend flour into 1/4 cup milk to form a smooth paste, Stir into soup. Add remaining milk and cheese. cook over medium heat until thickened, stirring frequently. Serve with crackers or corn muffins.
